Whether you're planning a party, looking for a new game-day appetizer, or simply want something different for dinner, this recipe is worth adding to your collection.
What Are Spinach and Ricotta Triangles?
Spinach and ricotta triangles are savory pastries made by wrapping a spinach and cheese filling in layers of thin, flaky filo dough and baking until crisp and golden.
Spinach-and-cheese-filled pastries appear in several cuisines, with perhaps the best-known version being Greek spanakopita.
Our version gets a Circle B Ranch twist with the addition of pork sausage.
The savory pork pairs beautifully with mild ricotta, salty Parmesan and feta, fresh spinach, garlic, and herbs. Wrap everything in crispy filo pastry and you have an appetizer that's difficult to stop eating!
Why Add Pork Sausage?
Traditional spinach and ricotta triangles are delicious on their own, but pork sausage adds another layer of savory flavor and makes them more substantial.
The combination works particularly well because each ingredient brings something different:
Pork sausage adds rich, savory flavor.
Ricotta creates a creamy filling.
Feta and Parmesan add salty, cheesy flavor.
Spinach adds freshness and color.
Garlic and herbs bring everything together.
Filo pastry provides that irresistible crispy exterior.
Serve a few alongside a salad for a light meal or make smaller triangles for an easy party appetizer.

- 10 ounces fresh or frozen spinach
- 15 sheets filo pastry, thawed according to package directions
- 10 ounces ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 ounces feta cheese, crumbled
- 1 scallion, finely chopped
- 1 clove garlic, minced

- 1 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
- Melted butter or olive oil for brushing the filo
- Paprika for sprinkling, optional
How to Make Spinach, Ricotta & Pork Sausage Triangles
Step 1: Cook the Pork Sausage
Preheat your oven to 350°F (180°C) and lightly grease or line two baking sheets with parchment paper.
Add the pork sausage to a skillet over medium heat. Cook, breaking the sausage into small crumbles, until completely cooked through.
Transfer the cooked sausage to a plate and allow it to cool slightly.
Step 2: Prepare the Spinach
If you're using frozen spinach, thaw it completely and squeeze out as much excess moisture as possible.
Don't skip this step! Excess water can make the filling soggy and prevent your filo pastry from getting beautifully crisp.
If using fresh spinach, sauté it briefly until wilted. Allow it to cool before squeezing out any excess liquid and chopping it.
Step 3: Make the Spinach and Ricotta Filling
In a large mixing bowl, combine:
- Cooked pork sausage
- Spinach
- Ricotta
- Parmesan
- Feta
- Scallion
- Garlic
- Fresh herbs
- Nutmeg
- Salt and pepper
Mix until everything is evenly incorporated.
At this point, you should have a creamy, savory filling with pork and spinach distributed throughout.
Step 4: Prepare the Filo Pastry
Filo dough can dry out quickly, so keep the sheets you're not currently using covered with a slightly damp kitchen towel.
Place one sheet of filo on a clean work surface and lightly brush it with melted butter or olive oil. Add another sheet on top and brush again. Repeat with a third sheet.
Cut the layered filo lengthwise into strips.
Step 5: Fold the Triangles
Place a spoonful of the pork, spinach, and ricotta mixture near the bottom of one filo strip.
Fold one corner diagonally across the filling to create a triangle. Continue folding the pastry over itself in a triangle pattern until you reach the end of the strip.
Place the finished triangle seam-side down on your prepared baking sheet.
Repeat with the remaining filo and filling.
Brush the tops lightly with butter or olive oil and sprinkle with paprika, if desired.
Step 6: Bake Until Golden
Bake for approximately 20–25 minutes, or until the filo is crisp and golden brown.
Allow the triangles to cool for a few minutes before serving—the filling will be hot!

Can You Make Pork and Ricotta Triangles Ahead of Time?
Yes!
That's one of the reasons these are such a great appetizer for entertaining.
Prepare the triangles ahead of time, cover them tightly, and refrigerate them until you're ready to bake. Then simply brush the tops and pop them into the oven before your guests arrive.
You can also freeze unbaked triangles for later. Freeze them individually on a baking sheet before transferring them to a freezer-safe container or bag.
