Carrabba's Sausage & Lentil Soup

John and I love Lentil soup. It can only be better if you add Circle B Ranch Sweet Italian Sausage and Marina's Tomato Sauce. You won't be disappointed!! Enjoy!
1 lb Sweet Italian Sausage (links or bulk)
2-3 Tablespoons Olive Oil
1 small onion, chopped
1 stalk celery, chopped
1 large carrot, chopped
1 small zucchini, chopped
3 garlic cloves
1 (24 oz ) jar Marina's Tomato Sauce
1 teaspoon salt
2 cups dry lentils
1/2 teaspoon black pepper
pinch red pepper flakes
a few Tablespoons Fresh Basil
pinch of oregano (or to taste)
a few Tablespoons fresh parsley
1/4 cup parmesan cheese, shredded
Remove sausage from casings and brown. Heat olive oil. Break up the meat while browning in the pan. Do not drain the fat from the meat or it will loose some of the Italian sausage flavor. Add veggies and cook until tender.
In a pot, combine all other ingredients and bring to a boil on high heat.
Once soup begins to boil, reduce heat and cover.
Simmer for about 1 hour or until the lentils are tender.
Add water (more broth if necessary) for desired consistency.
Makes 8, 12 oz servings
Sprinkle with parmasean cheese and serve.
