Spinach is a great accompaniment to pork. We love is sauteed with lots of garlic.
6 cups fresh spinach
1 tablespoon olive oil
1 clove garlic, minced
½ teaspoon crushed red pepper flakes
Heat the olive oil, garlic, and red pepper over medium heat.
When the garlic starts to turn a light golden color, add the spinach.
Cook the spinach until wilted and bright green.
Remove from heat and salt to taste.
