If you follow my blog you will know that I am always trying new meatloaf recipes. This came out delisious!! Enjoy!
1 pound Ground beef, 80/20
1 pound ground pork
3/4 cup bread crumbs
1 large egg, beaten
1/2 cup whole milk
2 tsp sea salt
1/4 tsp ground black pepper
1 tsp garlic powder
1 tsp onion powder
1/4 cup ketchup
2 Tbsp brown sugar
2 tsp Wocestershire sauce
1 tsp water
1/2 - 3/4 lb Baby potatoes, halved
2 Tbsp Extra virgin olive oil
Preheat the oven to 350 degrees F.
Grease a large rimmed baking sheet, set aside.
In a large bowl, mix together the ground beef, pork and bread crumbs until fully combined.
In a medium-sized bowl, whisk the egg together with the milk, 1 1/4 teaspoon salt, pepper, garlic powder, and onion powder.
Stir the whisked egg mixture, and 3 tablespoons ketchup into the meat, until fully combined. Use a stand mixer for this step if you have one.
In a small bowl, mix together the remaining 1 tablespoon ketchup, brown sugar, Worcestershire sauce and water until fully combined.
Place the potatoes on the baking sheet and drizzle with olive oil and remaining 3/4 teaspoon salt. Toss to coat evenly and spread it all out on the baking sheet.
Place the meatloaf mixture in the shape of a loaf in the middle of the pan, with potatoes around it.
Pour the brown sugar sauce over the tops of the meat loaf.
Bake in the oven for 30 minutes until the internal temperature of the meatloaf registers 160 degrees F with an instant read thermometer.
