Ravioli is a really easy meal to make your family especially when you are using Marina’s Tomato Sauce. Buy the ravioli of your choice, or you can make them from scratch, cook them, drain and serve with Marina’s Tomato Sauce. I thought that an Endive Walnut Salad would be the perfect accompaniment. Enjoy!
Ingredients
1 lb Ravioli (I used Cheese)
1 jar of Marina’s Tomato Sauce
Grated Romano Cheese
6 medium heads of Belgian Endive and cut into rounds
3/4 cup walnuts (coarsely chopped)
3 tbs of lemon juice
1 1/4 tbs Dijon Mustard
1 tbs Honey
2 tbs Olive Oil
Kosher Salt and Freshly ground pepper

Directions
For the Ravioli
Bring a large pot of water to boil. Cook the ravioli until it is done. This will depend on the brand you buy. Drain the ravioli and top with the Tomato Sauce. Serve with romano cheese.
Endive and Walnut Salad
Cut the endive into rounds and place into a bowl. In a small bowl whisk the lemon juice, mustard and honey until combined. Slowly whisk in the oil until emulsified. Season with Salt and Pepper. Drizzle the dressing over the endive and toss with the walnuts. Enjoy!!
