This is one of my favorite recipes to make. You is even made the day before. Enjoy!!
1 medium sized roasting (broiling) chicken, jointed
1/4 cup butter
1 to 1 1/2 tablespoon olive oil
1 large onion, chopped
2 garlic cloves, chopped
1 jar Marina's Tomato Sauce
3 to 3 1/2 tablespoons tomato concentrate
1 level teaspoon sugar
1/2 cup chicken stock
salt and pepper to taste
2 1/2 cups sliced mushrooms
4 tablespoons white winte
Coat the chicken joins with flour. Heat the butter and oil in a large pan. Add the chicken joints and fry until crisp and golden. Remove to a plate.
Add the onion and garlic to the pan and fry gently until pale gold.
Stir i the tomato sauce, tomato concentrate, sugar and stock, then season well to taste with salt and pepper. Bring to a boil .
Replace the chicken, cover the pan and simmer slowly for 30 to 45 minutes. Add the mushrooms and wine and contineu to cook for a further 10 to 15 minutes.
Serve with freshly cooked pasta.
